Pad Thai




Pad Thai is stir-fry dish made with flat rice noodles, shrimp, chicken, or tofu, peanuts, a scrambled egg and bean sprouts or one can make it vegetarian with different types of colourful veggies.The ingredients are sautéed together in a wok and tossed in a delicious pad thai sauce. It’s a common street food in Thailand and one of the most popular menu items at Thai restaurants around the country.Traditional pad thai sauce includes fish sauce, vinegar, sugar and tamarind paste. Tamarind paste is not easily found at a regular grocery stores so one can substitute it with rice vinegar. If you would like to use tamarind paste, substitute about 2 Tablespoons in place of the rice vinegar in this recipe.This amazing Pad Thai recipe is very easy and can be made in quickly with fresh ingredients and a delicious homemade pad thai sauce.


Ingredients:


100grams flat noodles

3 Tablespoons white oil

3 cloves garlic , minced

1" ginger, minced

50 grams uncooked chicken cut into small pieces

1 egg

1 small broccoli,cut into small pieces

1 cup fresh french beans, thinly sliced

Green and red bell peppers, thinly sliced

1 red onion,finely chopped

1 small carrot, thinly sliced

25 grams par boiled mushroom (button or oyester)

Black pepper powder,as per taste

Plain salt for blanching

Rock Salt, as per taste


For the Pad Thai sauce:


2 dried red chillies
2 Tablespoons fish sauce

1 Tablespoon dark soy sauce

3 Tablespoons sugar

2 tablespoons homemade tamarind paste

1 Tablespoon or more Sriracha hot sauce or any kind of chilli sauce to taste




Method:


Cook noodles just until tender. Rinse under cold water.

Mix the sauce ingredients together and set aside.

Blanch the broccoli pieces with little salt and keep aside.

Heat 1½ tablespoons of oil in a large saucepan or wok over medium-high heat.

Add the onion,garlic,ginger at first and let the raw smell go away. Then add bell peppers,beans,carrot, mushroom, broccoli and chicken together. While using chicken, cook until just cooked through, about 3-4 minutes, flipping only once.

Push everything to the side of the pan. Add a little more oil and add the beaten eggs. Scramble the eggs, breaking them into small pieces with a spatula as they cook.

Now,add noodles and sauce mix and toss everything to combine.

Add black pepper powder and rock salt to taste.Toss again and mix everything properly.

Dish them out immediately after cooking and enjoy it with any kind of Chinese or Thai gravy chicken item.
