Chitoi/Ashke/Saj/Sora Pitha





Ingredients :
Atop chal/Polau chal - 2 cups
Lukewarm water - as required
Salt - as required

Process:
Soak the rice for two hours.
Drain all water after two hours.
Pour the soaked rice into blender, along with salt and warm water as required.
Blend them until smooth paste.
Keep the batter into refrigerator for at least two hours, preferable to over night.



Method:

Heat a chitoi pithe mould or cast iron wok on high heat and grease it with oil brush.
Reduce heat to medium.
Pour 1/4 cup batter and cover it for 2-3 minutes.
Remove gently the edges of pitha, then remove fully from wok.
Repeat the same process to make all the pithas.
Serve hot with Nolen Gur.
