SCHEZWAN DOSA

Ingredients: (1cup = 250ml)
2 cups rice (soaked for 2 hours)
½ cup all purpose flour
½ cup coconut-grated
¼ cup finely chopped spring onions (greens)
⅓ cup finely chopped spring onions (white)
¼ cup finely chopped coriander leaves
⅓ cup finely chopped onions
⅓ cup finely chopped capsicum
½ cup grated carrot
⅓ cup finely chopped tomato
Schezwan sauce- 3 tablespoon
Butter - ¼ cup
Oil - to grease the frying pan

Water - as required 

Salt - as required




Method:

At first grind both the rice and coconut together to a very fine paste.Add required water,flour and salt.Stir it lightly with a spatula.The batter for Dosa is ready.Now, take a frying pan and heat the oil. Add chopped carrot,tomato, capsicum onion, a pinch of salt and let them shallow fry.Lastly, add two types of spring onions to it and mix the veggies well.Now, add the butter using a kitchen paper towel or cotton cloth or an onion halve, pour a ladle full of batter and spread it to get a round dosa.Cook the dosa on a low to medium flame.When the top side gets cooked, add about 1 to 2 teaspoons butter again and 2 tablespoons Schezwan sauce on the dosa with the spatula.Now add some of the veggies mixture along with some fresh coriander leaves and spread the mixture evenly on the dosa.Cook till the Schezwan dosa is nicely crisp and browned from the base.Fold one side and then fold and overlap the second one.Gently turn over the Schezwan dosa on the tawa.Finally, place the dosa on a plate or a chopping board and cut in three or four parts.Serve hot.
