COCONUT FISH CURRY

Ingredients:

4 pieces of Rohu or Vetki or Basa fish
1 (400 ml) can coconut milk (lite is fine)
1  tablespoon  vegetable oil
1  large onion, chopped
3  garlic cloves, minced
2  teaspoons curry powder
1⁄2 teaspoon salt
1⁄2 teaspoon pepper
1 cup of chopped tomatoes
1⁄2 cup  fish stock
1⁄2 lime juice




Method:
In a wok, heat oil over medium heat and fry the pieces of fish till light brown.Keep them aside.
Now,cook onion and garlic for 5 minutes or until soft in the same oil.
Add curry powder, salt and pepper and stir for 1 minute.
Add coconut milk, tomatoes and stock;bring to boil.
Reduce heat and simmer for 20 minutes.
Add fish pieces, cover and cook for 10 minutes or until fish flakes easily with fork.
Stir in lime juice and serve hot with steamed rice.
