Lachha paratha with Egg butter tadka

Lachha Paratha:
lachha paratha and Malabar paratha are completely different & the main difference is the flour, obliviously.While, in lachha paratha, we use 1:1 ratio of wheat and all purpose flour. where as, in Malabar paratha, it is just plain flour with lots of oil.Both the parathas are prepared with multi layers. perhaps it is the confusing part for most of them.

Ingredients:

for lachha paratha dough:
1 cup wheat flour / atta( 1 cup =250 ml)
1 cup maida / plain flour / all-purpose flour
¾ tsp salt
1 tsp sugar
pinch of baking soda (optional)
2 tbsp oil
½ cup Semolina(suji)
water as required, to knead

for lachha paratha:
¼ cup wheat four / atta
oil as required

Method :

firstly, take semolina,maida and wheat flour in a large mixing bowl.
Add salt, sugar, baking soda and a tsp of oil.
Furthermore, crumble well with your hands,and start kneading.
Add water as required to make a smooth and soft dough.
Cover with moist cloth and rest for 30 minutes.
Now,pinch a large sized ball dough, roll and flatten it.
Also dust with some wheat flour.
Roll it into a thin circle as of chapathi.Roll as thin as possible.
Grease it with oil and sprinkle wheat flour over it.
now start creating pleats by folding with the help of fingers.
Stretch the pleated dough as much as possible.
Begin to roll the pleated dough like a swiss roll.
Now, secure the end by pressing gently.
Take the rolled ball and dust with some wheat flour.
And start rolling to a thin circle.
Take tawa and place the rolled paratha.
Flip off after a minute and cook the other side.
Grease both the sides with oil.
Crush the paratha to form layers.
Serve hot with curry of your choice.



Egg Butter Tadka:

Ingredients:-
Whole green mung dal -1 cup(soaked over night or 4-5 hours)
Onion-1 large
Chopped ginger-1tspn
Chopped garlic-2cloves
Tomato-2small
Green chilis- 2-3
Turmeric powder-1tspn
Chili powder-1tspn
Garam masala powder-1tspn
Egg- 1-2
Salt & sugar to taste
Oil as needed
Water as needed

Method:-

Put green mung dal, salt ,water in a pressure cooker and
boil till 2-3 whistles.Chop onion, tomatoss,green chillis
and keep aside.Heat oil in a frying pan.Add the eggs,
salt and make scrambled(bhujia).Keep the scrambled
egg aside.Heat oil again,add chopped onion, ginger &
garlic, tomato, green chillis one by one. Add salt, turmeric
powder, chili powder to it. Now add the boiled mung dal,
water and garam masala powder to it. Cook for 2-3 mins
& then add the scrambled egg to it.Pour a butter cube on
it.Now the Tadka is ready.Serve hot with Roti or paratha.
