Rajasthani Mirchi Vada

Ingredients:
Rajasthani green chilly-6
Gram flour-1cup
Boiled potatoes -2
Freshly chopped coriander leaves-2 tblspn
Coriander powder-1tspn
Turmeric powder-1/4tspn
Red chilly powder -2tspn
Dry mango powder -2tspn
Chat masala-1tspn
Cumin powder-1/4tspn
Ginger paste-1tspn
Green chilly -1(finely chopped)
Saunf-1tblspn(dry-fried & grinded)
Asafoetida-1pinch
Cornflour-1tspn
Baking soda-1/4tspn
Oil-as much required for deep frying
Salt to taste.
Water.


Method:
Slit the chillis from center keeping it joined at the other end.
Take a bowl,smash the boiled potatoes & add coriander powder,
turmeric powder,1tspn red chilly powder,cumin powder,grinded saunf,dry mango powder,salt & chopped coriander leaves together.Mix them well with the
smashed potatoes.Keep aside for 10-15 mins.
Now,heat oil in a frying pan,temper with asafoetida & add the
ginger paste.Wait till raw smell goes out.Add the smashed
potato mix,saute for a while.Now,add chopped green chillis,
pinch of salt as per taste & cornflour.Saute for another 2 mins
& spread it on a flat dish for cooling.
Meanwhile take a big bowl to make a thick batter with gramflour,
baking soda,1tspn red chilly powder & water.
Now,fill the slited chillis with the potato stuffs.
Dip them into the batter & deep fry.Serve hot with salad & sauce.Sprinkle chat masala on it.
