Roasted Cauliflower

Ingredients:
Medium size cauliflower -1
Bay leaves-2
Whole garam mashala(cinnamon stick-1,
Cloves-2,cardamoms-2)
Onion paste-2tspn
Ginger-cumin paste-2tspn
Ghee-1tblspn
Oil-2tspn
Cashew nuts-6/7
Ground nuts-3/4
Raisin(soaked in water)-6/7
White sesame-1tspn
Poppyseed(soaked in water)-1tspn
Red chilli powder-2tspn
Plain yogurt-25gms
Cornflour-1/2tspn
Milk powder-2tspn
Salt & sugar-as per taste
Garammashala powder-1tspn


Method:
Beat the yogurt with cornflour & keep
 it aside.Make a medium thick paste of
milk powder in a separate bowl.
Mix cashew nuts,ground nuts,raisins,poppy
seed & whitesesame together in mixer grinder,
add 1/4th cup of water;make a thick paste of it.
Cut the cauliflower into medium pieces & boil
them upto 70%.
Now,heat oil in a frying pan,fry the boiled cauliflower
pieces till light brown.Now,temper rest of the oil along
with 1tblspn ghee with bay leaves & whole garammashala
till fragrance comes out.
Add onion paste;fry it till golden brown.Now,add
ginger-cumin paste & fry well.Add a pinch of salt.
Now,add the cashew nuts-raisins-poppyseed-white
sesame paste,mix them well & add half cup of water
Let the gravy boil.Pour the cornflour beated yogurt,red
chilli powder along with salt & sugar as per taste.Add
the cauliflower pieces.Cover the pan with lid for 2mins.
Open the lid,add milk powder paste,stir well.
Let the gravy thicken.Finally,add rest of the ghee & sprinkle
garammashalaPowder.Serve hot.

N.B-I have added boiled peas too which is completely optional.
