Achari Vindi



Ingredients:

Vindi(ladies finger)-200gm
Medium size onion-2
Green chilli-3-4
Turmeric powder-1tspn
Red chilli powder-1tspn
Kalajeera-2pinch
Poppy seed paste-2tspn
Mustard paste-1tspn
Amchur(mango powder)-1&1/2tspn
Mustard oil-2tspn
Salt & sugar- as required




Method:


Cut both the vindi and onions into small pieces.Heat oil in a frying pan & fry both the vindi & onions together and keep them aside.Now temper rest of the oil with kalajeera and add thepoppy seed+mustard paste along with the turmericpowder,red chilli powder.Mix the spices for a while.Now,add both the vindi & onions to the spice mix and add amchur powder,salt & sugar.Mix them well.Now,add 1/2cup water,cover the pan & cook for 5-6mins till the gravy becomes thick.Switch off the gas oven after 6mins & enjoy the dish.
