Ingredients:
3 cups flour
1 teaspoon salt
2-3 onion
2 medium sized potatoes (smashed)
½  teaspoon red chili flakes
1 teaspoon red chilli powder
½ teaspoon cumin powder
¼ teaspoon chaat masala
½  cup melted butter
2 tablespoons ghee
¼  cup milk
½  cup coriander leaves
Water as required

Method:
In a bowl add flour, salt and water. Then knead the dough for 5 minutes.
Grease with oil and wrap it with a cling wrap and leave it for 20 minutes.
In a bowl, add thinly sliced onion, smashed potatoes, salt red chili flakes, red chilli powder, cumin powder and chaat masala. Mix it well and set aside.
Divide the dough into 4-6 equal parts. Take one part and roll it out as thin as you can. Apply melted butter and sprinkle some flour on it to get the lachha type folds clearly. Add, potato-onion stuffing evenly over it.
Now, roll it with light hands and make a bun-like dough. Roll it again with a roller-pin to get the form of bread very carefully so that the stuffing doesn't come out of that.

Apply milk wash.
Now, heat a frying pan/tawa. Add some ghee and put one bread on it. As it's heavy in nature so each side of the bread will take almost 2-3 minutes to get baked. Turn out the other side. You can add more ghee this time if needed. Wait till the other side of the bread gets crispy and golden brown in colour.
Now,make all the Aloo Fateer Pyaji following the same process.
Serve this scrumptious dish hot with raita or mixed pickle and tea or coffee.
