AAM SRIKHAND or AMRAKHAND

(measuring cup used, 1 cup = 250 ml)
Ingredients:
1 to 1.5 cup curd (yogurt or dahi) or curd made from half a litre of milk
2 mangoes, chopped (aam)
2-3green cardamom, crushed (choti elaichi)
Sugar - as required(usually double the curd)
Raisins and nuts/pistachios/almonds for garnishing.



Method:
hung the curd in a muslin, cheese cloth or kitchen napkin for 3-4 hours.
Make a smooth puree of the mangoes.
Add the thick hung curd to the blender along with crushed cardamom and sugar.
Blend till smooth.
pour shrikhand in individual serving bowls.
Garnish with raisins and nuts or pistachios or almonds.
chill for 3-4hours and serve the amrakhand.
