Basanti Polao or Sweet Yellow Rice Pilaf

Ingredients:
Gobindo Bhog rice-2cups
Cloves-4/5
Cardamoms-4
Cinnamon stick-1
Bay leaf-1
Star annis-1(optional)
Cashew nuts-10/12
Raisin-9/10
Food colour(yellow)-1pinch
Saffron strands -1tblspn
Warm milk -1/2 cup
White oil+ghee-2tblspn each
Salt & sugar-as per taste
Water-3.5 cups(for 2 cups of rice only)






Method:
Soak the rice well in enough water for 1/2 hour.
Then drain the water carefully & spread the wet rice
over a flat dish or a paper.Let it dry for 30mins.
In the meantime soak the saffron strands in the warm milk.
Now,heat oil & ghee together in a big mouthed pan.
Temper it with bay leaf,star annis,cloves,cardamoms
& cinnamon stick.Stir for a while till the aroma comes.
Now pour the water into it.Pour the rice into the water
when it starts boiling.
Add salt,cashew nuts,raisins,food colour & mix them
well.Let the rice boil well for 8-10mins.Now,add
sugar & saffron milk and keep stiring continuously otherwise the lower part
of the rice may burn.
Cook for 3-4mins.Sprinkle 1/2 tspn ghee.Spread it over a flat
 dish to avoid greasiness.Serve hot.
